Cocoa Pandan Velvet Cupcakes

These were the cupcakes I prepared for Christmas celebration with my husband’s relatives. Since they are Indonesian, I thought why not using the Pandan flavour in the cupcakes. I chose to do the Red Velvet recipe and just changed the red food colouring into the Pandan paste gel, which can be found in Indonesian or Asian supermarket. The things that I forgot was not to mix the cocoa powder in. I should thought of substituting them with cake flour instead, because they ruined my green pandan colour. Well, there is always next time to do another proper green pandan velvet cupcakes. I will keep you posted :)

For some of you who are not familiar with Pandan, here is a brief information. Pandan leaf also known as screwpine leaf is staple in Asian culinary. It is used for both sweets and savouries. It is used to wrap chicken, to cook rice, to give a distinct fragrance to sweet and dessert. In some dishes, it is best to be cook with coconut milk.

    great idea, making an Asian twist on cupcakes! loving all the cupcake posts so far! i wish i could pipe frosting as prettily as you can :)

      Yeah I think velvet is nice recipe, I am going to try the velvet with cream cheese frosting, then dipped the frosting into chocolate. Wish me luck, I am afraid that the frosting will collapse while being dipped into the chocolate ;)
