Lemon Cupcakes with Lemon Curd Filling and Marshmallow Frosting

These lemon cupcakes are to die for. They are my ultimate favourite as far as my journey in making cupcakes. The lemon cupcakes by itself, without the frosting were divine. They are soft and very lemony. I absolutely falling in love with the lemon curd. What can I say, thank you Ms. Stewart. You are genius.

The things I did different or would do differently are:

  • I omit the salt, and will still omit the salt.
  • I would reduce the amount of sugar from 2 cup into 1 1/2 cup.
  • I would use the torch to brown the meringue, instead of baking them for few minutes in the oven. Well, I didn’t have a torch then.

    These look so good! I will definitely have to try them after your recommendation.. I have one question though – I’ve made marshmallow frosting and used a torch before and that worked out quite pretty, but the texture of it still remains very soft and marshmallowy. I’ve always wondered if you put 7 minute frosting in the oven, does it firm up like a baked meringue? Because that seems like it would be quite an appealing texture – preferable to the marshmallowy torched version, which is still pretty but I find it a bit too sweet..

      No, they are still very soft and have a marshmallowy texture. I just put them for couple of minutes to brown them slightly. I think they are way too sweet too. I am thinking of cutting the sugar next time I make them again.

      They are really good, aren’t they. I can’t stop eating the cupcakes while still baking the other batches in the oven. And the curd are delicious :) very lemony

        I know, me too! Haha. Definitely try it with the blow torch if you can (I was lucky to get one for my birthday last year!) it really adds a yummy smoky marshmallow flavor to the marshmallow frosting. tastes just like toasted marshmallows – so yummy!!!

          I’ll try them with a blow torch soon. I bought mine already down at the Victoria basement :)
