Lidah Kucing

Do you have left over egg whites stocked in the fridge? Then it is time to test your baking skill. Lidah Kucing is very popular during the Idul Fitri, Chinese New Year and Christmas back in Indonesia. It is pretty much a crunchy sweet cookie. You can make a little variation while making this cookie by grating cheddar cheese on top of the cookie mixture just before baking them.

Ingredients

  • 2 egg whites, at room temperature
  • 100 gr caster sugar
  • 175 gr whipped margarine (could be a combination of margarine and butter)
  • 130 gr plain flour

Instructions

  1. Beat egg whites and caster sugar until high peak is achieved.
  2. Mix the whipped margarine and plain flour bit by bit one after the other into the egg mixture.
  3. Using the triangle piping plastic bag, cut the end of the plastic to achieve 8mm wide. Scoop in the mixture and start piping for a line as long as 3-4 cm in length.
  4. Oven at 170 C.

    Lidah Kucing means cat tongue so it pretty much looks like a tongue. As my description in step 3, when you cut the piping plastic bag 8 mm wide and start piping it in the baking sheet, it will spread wider and bigger when you baking it. I haven’t made Lidah Kucing for sometimes now, I will posted as soon as I make it. Good luck. Let me know the result though.

    I had to try this, it looked so simple to make, and it really was : D I had no problems and the cookies were rich and crispy. I did however use lavender scented sugar that I had made a long time ago and have not had a good use for yet : c it tasted good but I think not enough sugar in the cookies to bring it out nicely : / I would try plain ones next time.

      Thank you for trying the recipe.. I am glad you like the cookie. Wow a lavender scented sugar.. hmm never heard of that before… sounds interesting ;)
      Yeah the more sugar you add… I think the crunchier the cookie will be.. but I don’t have a sweet tooth, that is why I like to reduce the amount of sugar (apply to all my baking recipe..so remember to add more if you try other baking recipes ;)
      I haven’t even make this recipe for a long time.. so haven’t got any picture yet…
